Here are the recipes for delicious quick summer treats!

Five Spice Turkey and Lettuce

These delicious wraps are simple and easy to make, not to mention good for you. Today we are serving them with chile-garlic sauce and rice vinegar for extra zip.

Ingredients:

      • 1/2 cup(s) water

      • 1/2 cup(s) instant brown rice

      • 2 teaspoon(s) sesame oil

      • 1 pound(s) 93%-lean ground turkey

      • 1 tablespoon(s) minced fresh ginger

      • large red bell pepper, finely diced

      • 1 cup(s) water chestnuts, rinsed and chopped

      • 1/2 cup(s) reduced-sodium chicken broth

      • tablespoon(s) hoisin sauce

      • 1 teaspoon(s) five-spice powder

      • 1/2 teaspoon(s) salt

      • head(s) Boston lettuce, leaves separated

      • 1/2 cup(s) chopped fresh herbs, such as cilantro, basil, mint and/or chives

      • large carrot, shredded

Directions

  • Bring water to a boil in a small saucepan. Add rice; reduce heat to low, cover and cook for 5 minutes. Remove from the heat.

  • Meanwhile, heat oil in a large nonstick pan over medium-high heat. Add turkey and ginger; cook, crumbling with a wooden spoon, until the turkey is cooked through, about 6 minutes. Stir in the cooked rice, bell pepper, water chestnuts, broth, hoisin sauce, five-spice powder and salt; cook until heated through, about 1 minute.

  • To serve, spoon portions of the turkey mixture into lettuce leaves, top with herbs and carrot and roll into wraps.

Margarita Grilled Chicken

We’re going to add a little twist to the traditional Grilled Chicken recipe. This recipe is incredibly simple and delicious, and incorporates margarita mix!

Ingredients

  • 3 lbs. boneless chicken, skinless chicken breasts halves

  • 2 cups bottled margarita mix

Directions

  • Pour the margarita mix into a large resalable plastic bag. Add the chicken breasts, and press out as much of the air as possible before sealing. Marinate 4 to 8 hours in the refrigerator.

  • Preheat an outdoor grill for medium-high heat.

  • Lightly oil the grill grate. Remove chicken from marinade, and discard the marinade. Grill chicken 8 minutes per side, or until juices run clear.

Jello Mini-Mimosas

We’re going to show you how to create these mini mimosas! These are simple to make and refreshing on a hot summer day!

Ingredients

  • ¼ cup boiling water

  • 1 pkg (3oz) JELL-O Orange flavor gelatin

  • ½ cup cold club soda

  • 2 fresh strawberries, each cut crosswire into 5 slices

Directions

  • ADD boiling water to gelatin mix in small bowl until completely dissolved

  • Stir in club soda

  • Place strawberries in 10 oz plastic cups sprayed with cooking spray, fill with gelatin. Refridgeragte 1 hour or unti firm

  • Unmold before serving
