"Fresh Ideas" for Super BowlWith Super Bowl 47 creeping up on us, Dan Hittle of Albertsons joined us on GMW to give us some "easy to make" recipes that will have you winning with your guests.
Pastrami sliders made in the Crockpot
16 ounces thinly sliced lean deli pastrami
12 ounces Smithwick's Irish ale or 12 ounces of any dark beer
10 1/2 ounces beef consommé
1 small onion, slivered
1 teaspoon ground mustard
4 ounces thinly sliced baby Swiss cheese
8 small hard rolls or 8 small dinner rolls or 8 small rye rolls, split coarse ground mustard, as needed
1 deli barrel-style pickle, thinly sliced
1.Whisk together ale, consommé and mustard in a regular crock pot. Add slivered onion and cooked deli pastrami;
2.Cover and cook on HIGH for 3 hours.
3.Drain pastrami and reserve cooking liquid;
4.Serve pastrami on rolls with Swiss cheese, mustard and pickle slices.
5.Place in toaster oven or moderate oven to crisp up the rolls and get the cheese a little melty if you like.
6.Serve along with a cup of the cooking liquid as an au jus dip.
Homemade baked chips – either tortilla or Pita.
10 -12 flour tortillas
vegetable oil (or spray)
spices (salt or seasoned salt, chili powder, cinnamon sugar) your choice
1.Cut tortillas into 8 wedges.
2.Brush or spray baking sheet with oil.
3.Arrange tortilla wedges in a single layer on the baking sheet and brush or spray lightly with oil.
4.Sprinkle with seasonings: salt or seasoned salt, chili powder, cinnamon sugar, etc.
5.Bake at 325 degrees until crisp and lightly browned, approximately 10 minutes.
6.Serve with your favorite dips
Fire and Ice Hot Chocolate
4 cups milk
6 tablespoons of your favorite chocolate mix cocoa powder
1/2 teaspoon vanilla extract
1 cup vanilla ice cream
1.Heat milk in a sauce pan over medium high heat (any milk - skim, 2%, whole -- it all works just fine!). Do NOT boil -- just heat thoroughly. Wisk in vanilla and chocolate powder. I recommend 6 heaping spoonfuls of chocolate powder -- even more if you are a chocolate fan. Don't be stingy -- it's chocolate!
2.Now put a scoop of your favorite vanilla ice cream in the bottom of a mug (about a 4th of a cup).
3.Poor your hot chocolate mixture over the ice cream. Start drinking! The creaminess of the ice cream makes the hot chocolate even more delicious. You get a little cold with a little hot (fire and ice). Plus, there’s less of a chance of burning your tongue on the hot chocolate, too.
