Albertsons Fresh Ideas: End of Summer

Just because Summer is over doesn't mean you can't still enjoy these Summer time favorites! Dan Hittle of Albertsons stopped by GMW to show us some eay ways to make delicious treats for that final Summer party! (Great for football too!)

**Oven Baked Coconut Shrimp Coconut shrimp and dipping sauce will leave you feeling like you are in the Tropical islands.
This is a really easy recipe to make, and will really impress your family and friends.
* 1 lb (24) large shrimp, peeled and deveined
* 3/4 cup shredded sweetened coconut
* 3/4 cup Panko crumbs
* 2 tbsp. all-purpose flour
* 1 large egg
* Pinch of salt
* Non-stick spray
* 1/2 cup apricot preserves
* 1 tbsp. Rice wine vinegar
* ¾ Tbsp. crushed red pepper flakes

* Preheat the oven to 425 degrees
* Spray a non-stick baking sheet with cooking spray
* Combine coconut flakes, Panko crumbs and salt in a small mixing bowl
* Place the flour on a small bowl
* Whisk the egg in a small bowl
* Lightly season the shrimp with salt
* Dip the shrimp in flour, shaking off the excess
* Dip the shrimp into the egg
* Dip the shrimp in the coconut crumb mixture
* Lay the shrimp on the baking sheet and lightly spray the top of the shrimp with cooking spray
* Bake in the middle rack for 10 minutes
* Turn shrimp over and continue cooking for 6-7 minutes, or until cooked through
* While the shrimp are cooking, mix the apricot preserves, rice wine vinegar and red pepper flakes together to form the dipping sauce
* Remove from oven and serve with the dipping sauce

Baked Chicken Nuggets Baked chicken nuggets are another great dinner option.
For those of us that are really pressed for time, pre-made chicken nuggets do seem like the best option. But this recipe barely takes any extra time to prepare.

* 2 large boneless, skinless chicken breasts, cut into 1 inch cubes
* 1/3 Cup Panko crumbs
* ¼ Cup regular breadcrumbs
* ½ tsp salt
* ½ tsp pepper
* 1 tsp powdered sugar
* olive oil
* butter spray (or any cooking spray)

* Preheat the oven to 425 degrees
* Grease a sheet pan with olive oil
* Combine the panko crumbs, regular crumbs, salt, pepper and powdered sugar in a medium bowl
* Drizzle ¼ Cup olive oil into a small bowl
* Toss the chicken cubes in the olive oil and then dredge them in the breadcrumb mixture, making sure each piece is coated evenly
* Place the nuggets on the oiled baking sheet and spray the tops with butter spray
* Bake for 12-15 minutes, until golden brown.
