"Fresh Ideas" Valentine's DayThere's good news about chocolate, it's not just for dessert anymore! And this Valentine's Day, if you're looking to be original in your gift giving, Dan Hittle of Albertsons has got three homemade chocolate recipes that your sweetheart is going to love!
Five-Minute Chocolate Oatmeal
½ a cup of rolled oats
¾ cup milk of choice
1 ½ tbsp Essential Everyday cocoa powder
1/8 tsp salt
¼ tsp pure vanilla extract
Extra sweetener if desired
Combine all ingredients and cook, uncovered, over medium-high heat for 5-7 minutes.
When it starts to bubble, stir occasionally.
If you'd like, add 1 tbsp sugar (or 1 packet nunaturals stevia).
Mid-morning or afternoon is snack time according to my stomach. And it's easy to think, "Let me just grab a candy bar." Instead of doing that, try snacking on these healthy chocolate mini muffins that are better for you than you think!
Healthy Choc Mini Muffins
½ cup oil
1 cup broccoli finely grated
½ cup zucchini finely grated
½ cup white self raising flour
½ cup whole meal self rising flour
3 Tbsp Cocoa power
1 teaspoon baking power
1 tablespoon low fat milk
Whisk eggs, oil and sugar together in large bowl.
Add vegetables, flours, cocoa, baking powder and milk and mix well.
Spoon into greased (or paper lined) mini muffin trays and bake at 325 degrees for 15-20 minutes.
Chocolate on your chicken and on a salad? Yes it can be done! Don't be fooled. This looks complicated but it isn't and most importantly, it includes chocolate!
Cocoa and Curry Rubbed Chicken Breast
1 tbsp. canola oil
6 (5 0z) each boneless, skinless chicken breasts
6 heaping tsp Cocoa Curry Sp8ice Mix
2 tbsp ground cumin
2 tbsp curry powder
1 tsp salt
1 tsp ground black pepper
1 ½ tbsp Essential Everyday Baking Cocoa, unsweetened
Heat oven to 350 degrees F and grease your baking sheets;
Stir together cumin, curry powder, salt, pepper, Essential Everyday Coca, unsweetened in a medium bowl and set aside;
Rub chicken breasts with canola oil
Sprinkle 1 heaping teaspoon prepared cocoa curry spice mix over each chicken breast;
Bake 20 to 25 minutes or until juices are clear.
Let chicken cool -- cut into pieces and add to your favorite green salad.
